
Years ago, I bought millet at the pet store for my parakeets. A few days ago, I bought millet in the bulk aisle at Whole Foods, for me. People all over the Eastern half of the world eat it daily, so I figured it was worth a try.
Millet is a grain rich in protein and B vitamins, and when dry looks a lot like quinoa. It's as easy to cook, too: 3 parts water to one part grain, brought to boiling then covered and reduced to a simmer for 30 minutes.
My friend Michelle told me that millet is kind of bland, so I added a little salt and some garlic while it was cooking. And yeah, the consistency was nice but there wasn't a ton of flavor beyond the ones I'd added. But I'm a big big fan of the consistency -- less individually-grainy, a bit mooshier, but in a good way.
