Arguments for choosing organic olive oil over conventional (from idealbite.com):
-Pesticides are fat-soluble and thus concentrate in the oil portion of plants (and that includes olives). Choosing organic decreases exposure risks.
-A Greek study found that organic olive groves cause fewer CO2 emissions than conventional ones and that both methods can be economically viable for farmers.
So the next time someone asks you why they should bother with organic when it costs more than conventional, you have two good answers.
