
One of my favorite ways to cook is to grab a bunch of things from the fridge and pantry and throw them all together in a big pot. No recipe required, no specific ingredients necessary. This is a great way to use up veggies that are in danger of going bad.
Today's pot included pinto beans, carrots (whole, with the leafy tops), onion, kale (as always), quinoa, garlic powder (no fresh garlic in the house), and ground black pepper. Total cook time was about 20 minutes, and I have plenty of leftovers for lunch tomorrow.

Just looking in the refrigerator and seeing what's in there can be such a delight when thinking about what you can whip up as a dish. I did that with tofu, coconut milk, eggplant, mushrooms, chinese snow peas, bell peppers and a spoonful of yellow curry...mmm good had myself a tofu curry medley.
Ooh, sounds good! I hadn't thought of adding curry, I'll have to try that.
