I can cook for one person, or for ten. When I try to cook for two, I end up with lots and lots of extra food. So a big part of my cooking repertoire (if you can call it that) is creative things to do with leftovers.
I had a ton of leftover quinoa in the fridge from a recent attempt to cook for two, so tonight I came up with a vaguely Mediterranean-inspired recipe to use it up:
2 cloves garlic
1 tablespoon unfiltered extra virgin olive oil
1/2 cup cooked cold quinoa (or so -- use however much you want to eat)
1/2 teaspoon lemon juice
Heat olive oil over medium-low flame in a small pan. Peel and crack the garlic cloves and add to pan. Saute for 10 minutes, stirring occasionally. Add quinoa, and saute for another ten minutes. Sprinkle with lemon juice, stir well, then remove from heat. Pick out the garlic pieces and serve.
Super easy recipe, but surprisingly good. I paired it with roasted butternut squash, but it could go with just about anything.
